Ghana Jollof Rice One of the things I am most excited about in launching this channel is my exploration to learn how to make my own culture’s traditional cuisine. In honour of Ghana’s 62nd independence day, my FIRST and most favorite Ghanaian dish I will be learning how to make is the country’s most iconic dish, Jollof rice with none other than my Mom Dora’s recipe. This recipe is traditionally all cooked on the stovetop but my Mom's version finishes this recipe in the oven (to save time and avoid burning). FOLLOW ME: Instagram: https://www.instagram.com/barbsfavfoods/ ++++++++++++++++ Ingredient List 13-oz Chicken Quarters 3-4 cups Water 1 1/2 Tbsp Oil 1 Medium Chopped onion (half for broth, half for sauce) ½ tsp cumin ½ Tbsp grated ginger 2 tsp curry powder ¼ tsp hot chili pepper 2 tsp salt (1 tsp broth, 1 tsp sauce, then more to taste) 2.5 cups Basmati rice 5.5 fl oz Tomato paste (full can) 1 bottle crushed or diced tomatoes (24 fl oz) 3 tsp Garlic 2-3 Bay leaves Recipe Directions Chicken Broth Cook chicken at medium heat with water, half of the onions and 1 ½ tsp garlic. Cook until tender (approx 12-15 mins). Set aside Tomato Sauce In a separate pot In a pot, add the oil and remaining half chopped onion. Cook until soft. Add crushed tomatoes, tomato paste, and seasonings. Add cooked chicken and chicken broth. Let cook at a simmer on low to medium heat for about 12 mins. Add pre-washed basmati rice to the tomato sauce (don’t use brown or parboiled rice). The sauce will look very saucy. Let cook on the stove at low for 10-15 mins. Preheat oven to 375. Scoop rice into a casserole dish. Add up to ¼ cup water if rice is dry before placing in the oven. Cover with tin foil to keep moist. Cook in the oven for 35-40 mins (until rice is fully cooked through). BFF Tip: Always be sure to thoroughly rinse your rice (multiple times until water runs clear) before using.
