Spicy Red Lentil Soup. In the dead of winter, I love to make soup as a comfort food to stay warm, specifically for weekday lunches. This recipe is from soscuisine.com. It is such a simple recipe but all of the spices really create an impact making a flavour soup. As I like to do, I changed things a bit to make it my own. I also love to double this recipe and portion into mason jars and put in the freezer to have some quick lunches (with a baguette maybe?) for weeks. I also love the spice combination but don't think they amp it up enough in this recipe so i double most of the the portions of the spices. . Also most of the optional elements in the recipe (lime, cilantro and coconut milk) to me are mandatory as they help to improve the flavour complexity. My take on this recipe: 1 cup red-orange lentils (dried), rinsed and drained 1 tbsp canola oil 1 medium white or yellow onion (this recipe calls for red onion), finely chopped 2 cloves garlic, pressed or minced ½ cup chopped celery (that’s my addition) 1 tbsp ginger root, grated 1 tsp turmeric (original recipe calls ½ tsp) 1 tsp ground cumin (original recipes call for ½ tsp) 1 tsp curry powder 1/8 tsp ground cinnamon 1/2 tsp chili powder (original recipe calls for 1/8 tsp cayenne pepper) 4 cups chicken broth 3/4 cup canned tomatoes (diced) 2/3 cup unsweetened coconut milk, (this recipe make it optional, for me it’s a must) 1/2 tbsp lime juice, freshly squeezed 1 salt & pepper to taste 3 tbsp fresh cilantro (recipe make it optional, for me it’s a must) Recipe is from: https://www.soscuisine.com/recipe/spi...
